What are the physics properties of this toy? It does not have any batteries, it runs only on winding.

As a general rule, it is unwise to click on links provided by strangers.
So in the absence of watching the video, a toy that must be wound to run generally contains a spring that stores the mechanical energy of the winding motion for later use as the source of any subsequent motive force required.
Generally, releasing the wound spring causes a shaft inside the toy to turn. Mounted on that shaft is one (or more) small gear(s) that is (are) connected to a series of other differently sized gears.
These gears convert the single rate of rotation into multiple different rates of rotation. (important concept: gear ratio)
The rotation motion can be used directly to cause rotation of other parts of the toy, or can be converted to a periodic linear motion for use by other moving parts of the toy.
